I posted a picture of these babies (my zucchini boats) on Facebook the other night and had a few requests for the recipe. Problem is, I often don't use recipes and instead throw ingredients together as I go and hope that the meal turns out okay! Lucky for my family, this was a surprisingly wonderful meal - even amongst the zucchini haters.
Here's my version of what I did the other night.
Two large zucchini
3 TB minced garlic
1 pound of venison (or sausage or hamburger)
About 15 fresh tomatoes - chopped (you could use 2-3 cans of tomatoes as well)
2 large green peppers - chopped
1 6 oz can of tomato paste
Few TB of olive oil
salt - to taste
pepper - to taste
Italian Seasoning - to taste
Lots of grated parmesan cheese.
Lots of grated mozzarella cheese.
Preheat oven to 450. Cut zucchinis in half length wise, scoop out the guts, and add a little olive oil, salt, and pepper to the remaining shell. Place these on a cookie sheet cut side down and bake for 10 minutes.
In the meantime, brown the meat with the onion and garlic. Add the green peppers, tomatoes, paste, and seasonings. Let it all simmer for 30-45 minutes. Add the meat mixture to the zucchini boats. Top with lots of parmesan and mozzarella cheese. Bake at 350 for about 30 minutes.
